Bio coming soon. Amanda Barquero Hey guys! I am a senior at UNF majoring in Psychology with a Minor in ASL and Deaf Studies. I should be graduating this fall, so my year has been filled with a mixture of nervousness and excitement. I was born in Panama City, Panama on a U.S. Military base and lived there for a little less than a year before moving to Puerto Rico and then Florida, where I lived most of my life. This will be my first time traveling outside of the U.S., so I am ecstatic! I have dreamed of traveling to Italy my entire life and still can't believe it's actually about to happen. Hello everyone! I am an incoming senior in the nutrition and dietetics program, hoping to one day practice as a physician assistant using nutrition as part of my medical practice. I was born and raised in Tampa, Florida but have spent most of my life traveling around with my family. I am super passionate about good, healthy food, and using food as part of the healing process, so going to Italy, one of the foodie capitals of the world, will be a dream come true for me! Rachel Mattoon I'm a junior in Nutrition, I transferred in to UNF from Johnson and Wales University with a Culinary Arts degree. I'm very excited to learn about the Italian way of life and their diet. I can't wait to try all the different kinds of pasta! I love to travel and this will be my first time in Europe. Along with the group trip to Tuscany and Umbria, my parents and I will be staying a week in Rome. I couldn't be more excited! Caitlyn Phelps Hey y'all! I am a senior at UNF majoring in Nutrition and Dietetics with a minor in Psychology. I graduate next spring (2017)! I was born and raised in Kissimmee, Fla.; which is just a stone throw away from Walt Disney World. I have a passion for all things food, health and fitness. As a major foodie; traveling to Italy, one of the most well known food capitals of the world, has been on my bucket list for as long as I can remember. This will be my first trip to another continent! What better way is there to be in Italy then with my fellow ospreys! Leslie Roberts I'm a senior in the nutrition and dietetics program. I graduate spring 2017! I was born in Jacksonville and have been raised in the area my whole life. I'm really excited to study the Mediterranean diet in Italy, it's something I never thought I would do. After our study abroad I will also be visiting Switzerland, Germany, and the Netherlands. Amber Saunders Hey! I just graduated from UNF with a Bachelor's degree in Nutrition & Dietetics. I had my first taste of Europe the summer before last in Ireland and am looking forward to more tastes of it—literally! I’m excited to see for myself how food is processed and produced in Italy along with how so many factors (social, historical, cultural, etc.) impact what we put in our mouths and how we feel as temporary “Italians.” Goditi la vita! Erica Silveira Bio coming soon. Addie Steele Hello! I am a senior at UNF majoring in Nutrition and Dietetics and I'll graduate next spring. I'm from Melbourne, Fla., about 30 minutes from Cocoa Beach, and I've traveled to Europe once before when I was in eighth grade on a family vacation to Scotland. I am so excited to be traveling back to Europe to experience how Italian food and culture collide to provide a new perspective on health! Rachel Wakefield I'm a senior majoring in Nutrition and Dietetics. I am from Cocoa Beach and a part of Delta Gamma sorority at UNF. I am beyond excited to be in Italy studying the Mediterranean diet! I have been abroad to France and Spain and I am looking forward to expanding my travels and knowledge of European culture. Jennifer Wihlborg Hi everyone! I am currently a Junior entering the Nutrition and Dietetics program this fall. I have been working very hard my first two years to ensure an internship once senior year rolls around, so I am very excited to be spending part of my summer studying abroad! My maternal grandparents are both from Sicily so I was raised with a strong Italian background. I hope to gain precious knowledge and an invaluable experience from this trip with my fellow ospreys. Catherine Christie Catherine Christie is Associate Dean in the Brooks College of Health at the University of North Florida. She is a Past President of the Florida Dietetic Association and co-author of four books including The Latino Food Lover’s Glossary, Fat is Not Your Fate, Eat to Stay Young and I’d Kill for a Cookie. Jacqueline Shank Jackie Shank is currently the undergraduate director of the nutrition program, which includes an accredited Didactic Program in Dietetics. She has a passion for translating evidence-based nutrition science into health-enhancing information for consumers. She teaches nutrition and health majors in these courses: Claudia Sealey-Potts Claudia Sealey-Potts, is a very active, dynamic and futuristic leader, researcher and educator in the field of nutrition and dietetics. Focus areas include prevention of diet-related chronic diseases (obesity, diabetes, hypertension) in children and adolescents. Obesity and type 2 diabetes prevention and treatment in adults is also of interest. Evidence-based practice in application of medical nutrition therapy. Zhiping Yu Zhiping Yu is an assistant professor in the department of Nutrition and Dietetics at University of North Florida. Dr. Yu obtained her doctoral degree in Nutritional Science from Pennsylvania State University and her bachelor and master's degrees in Food Science in China. She is also actively involved in community service projects to promote healthy eating and physical activities in Jacksonville population especially Chinese population. Michael Boyles Michael is the graphic designer at the Center for Instruction and Research Technology at UNF. His interest include fine art and art history, music, different cultures around the world, and food, which has led him to joining this journey to support the faculty and students with documenting their travels. |
